Method

  1. Brown the turkey hard, do not just cook it grey

    Lean turkey has little fat to carry flavour, so the browning has to do the work. Press it into a hot pan and let it develop a real crust before breaking it up. Stir it constantly and it steams pale and bland, which no amount of chili powder can rescue.

  2. Fry the tomato paste and spices to build depth

    Cook the tomato paste, chili powder, cumin and paprika in the oil with the onions until the paste darkens and the spices smell toasty, about two minutes. This step gives lean turkey chili the depth that fattier beef chili gets for free.

  3. Two beans for texture and fibre

    Kidney and black beans together give you creamy and firm textures and push the fibre to twelve grams a bowl. They also stretch the meat, so the chili is filling and economical. Rinse tinned beans to cut sodium and the tinny taste.

  4. Simmer uncovered to concentrate

    Thirty minutes uncovered lets the liquid reduce and the flavours concentrate. Turkey chili can start watery because the meat releases moisture, so the reduction is what pulls it together into a thick, scoopable chili.

  5. Season in layers and taste at the end

    Add salt in stages and taste before serving. Lean chili often needs a final adjustment, a pinch more salt, a shake more cumin, or a squeeze of lime to brighten. Adjust at the end, not just at the start.

  6. Rest it, and it is better tomorrow

    Let it sit fifteen minutes before serving so it thickens and settles. Chili is one of the few dishes that genuinely improves overnight as the spices meld, so make a double batch and eat the leftovers proudly.
